1/2 medium chopped onion
1 teaspoon soy sauce
4 eggs, large
1 cup grated cheese (your choice)
1 T. butter
3 cups zucchini, diced
1 cup milk or light cream
seasoned pepper, salt
1/2 teaspoon basil
8 ounce can minced or chopped clams (discard juice)
1 brown-rice crust*
In a saucepan, saute onion in butter until soft. Add the soy sauce and stir. Add diced zucchini, and saute 3-4 minutes. Then add 2 T. water,
cover and steam 5 minutes. Beat together the eggs, milk, cheese and seasoning. First
put zucchini mixture into rice crust, then pour egg mixture over everything. Bake
at 350° for 40 minutes, or until eggs are puffy and set.
Line an oiled 9" pie pan or casserole dish with 2 to 3 cups cooked brown rice,
pushing some up the sides. Make it 1/2 to 1 inch thick. Do not bake crust in advance.
Pour in the filling and bake together.
