**NOTE: All our omelet recipes call for 3 eggs and 1/2 cup chopped clams
3 artichoke hearts, diced
and 1/2 medium avocado
or 1 T. bell pepper, diced
You may also add one or more of the following ingredients:
3 ounces Swiss cheese, grated
1/2 medium tomato, diced
salt and pepper to taste
Saute artichoke hearts, and avocado, or bell pepper first, then add clams and saute
3 minutes, or until plump.(Don't overdo it; overcooked clams are tough.)
Then prepare the omelet according to the instructions on the "Secrets for the
Perfect Omelet" card.
Other ingredients you may want to add: spinach, Jalapeño peppers, different
kinds of cheeses, cottage cheese, sour cream, chives, parsley, or dill.
