**Note: All our omelet recipes call for 3 eggs and 1/2 cup chopped clams

Add:
1/4 cup sliced almonds
Or:
3 asparagus spears
Or:
1/3 cup celery, chopped fine

And, if you like:
3 ounces cheese, your choice, grated
salt and pepper to taste



Saute almonds, or asparagus, or celery first, then add clams and saute 3 minutes, or until plump. (Don't overdo it; overcooked clams are tough.)

Then prepare the omelet according to the instructions on the "Secrets for the Perfect Omelet" card.

Other ingredients you may want to add: spinach, Jalapeño peppers, different kinds of cheeses, cottage cheese, sour cream, chives, parsley, or dill.
