**NOTE: All our omelet recipes call for 3 eggs and 1/2 cup chopped clams
1 T. bell pepper, diced
2 T. onion, chopped
2 large shrimp, diced
4 baby (or 2 regular) Smokie Link sausages, chopped
And, if you like:
3 ounces cheese, your choice, grated
salt and pepper to taste
Saute bell pepper, onions, shrimp and/or sausages first, then add clams and saute
3 minutes, or until plump. (Don't overdo it; overcooked clams are tough.)
Then prepare the omelet according to the instructions on the "Secrets for the
Perfect Omelet" card.
Other ingredients you may want to add: spinach, Jalapeño peppers, different
kinds of cheeses, cottage cheese, sour cream, chives, parsley, or dill.
