**NOTE: All our omelet recipes call for 3 eggs and 1/2 cup chopped clams

3 ounces chopped sausage

You may also add one or more of the following ingredients:
3 ounces grated cheese (your choice)
2 T. olives, diced
1 t. pimiento, diced
salt and pepper to taste

Brown sausage (and olives) first, then add clams and saute 3 minutes, or until plump. (Don't overdo it; overcooked clams are tough.)

Then prepare the omelet according to the instructions on the "Secrets for the Perfect Omelet" card.

Other ingredients you may want to add: spinach, Jalapeño peppers, different kinds of cheeses, cottage cheese, sour cream, chives, parsley, or dill.
