**NOTE: All our omelet recipes call for 3 eggs and 1/2 cup chopped clams

2 T. olives, diced
1/2 medium tomato, diced
2 T. onions, diced
And, if you like:
3 ounces Swiss cheese
3 bacon slices, chopped
And, if you like:
1/2 medium avocado, diced
salt and pepper to taste

Saute olives and onions, (or bacon) first, then add clams and saute 3 minutes, or until plump. (Don't overdo it; overcooked clams are tough.)

Then prepare the omelet according to the instructions on the "Secrets for the Perfect Omelet" card.

Other ingredients you may want to add: spinach, Jalapeño peppers, different kinds of cheeses, cottage cheese, sour cream, chives, parsley, or dill.
