1 pound chopped fresh clam meat (use Pismo, Horseneck or Washington clams)
Frozen clam meat is O.K. Do not use canned clam meat
1 large onion
4 large potatoes
2 cups chicken broth (homemade only)
10 slices of lean bacon
1/4 teaspoon thyme
1/2 teaspoon basil
salt and pepper to taste
1/2 cup milk
1/2 cup cream



Grind the onion and 4 potatoes in a food processor or grinder. Put the ground onion and potatoes in a large pot, and add two cups of homemade chicken broth. Simmer, making sure it does not come to a boil. Chop 10 slices of lean bacon and fry at low heat until crispy. Drain the bacon, saving one teaspoon bacon fat. Add the bacon and 1 teaspoon of the bacon fat to the simmering pot. Add thyme, basil, salt, and pepper.

Now add the chopped fresh clams. Simmer the Clamkin® Family Clam Chowder slowly for 2 hours. Shortly before serving, stir in the milk and cream. Allow just enough time for milk and cream to heat up to the temperature of the stock. Serve chowder immediately with hot Sourdough bread and butter. Serves 4.
